Kale Towers
Makes 1 tower
- 1 cup kale leaves
- 1 teaspoon olive oil
- 2 tablespoons hummus
- 1 piece of whole wheat toast, cut into 4 triangles
- Pinch of sea salt
Preheat oven to 400 degrees.
Try to make this whole recipe standing on your tip toes to make you as tall as possible!
Brush the kale with the olive oil and place on a lightly greased baking tray.
Bake in the oven for 5-7 minutes, and then use a metal spatula to flip kale onto the other side. Bake for 5-7 more minutes, until the kale becomes crispy. Remove from oven.
Reach up to the ceiling one final time and then spread hummus on each piece of toast. Place the baked kale on top of the hummus and keep stacking until you run out of ingredients!
