Bean Appetit

Snip Chips

  • 1 parsnip, peeled
  • Pinch of garlic powder
  • Pinch of cinnamon
  • 1 tablespoon brown sugar
  • 2 tablespoons olive oil

Preheat oven to 425 degrees. Slice parsnip into thin circles.

In a mixing bowl, combine garlic, cinnamon, brown sugar and olive oil. Gently toss with the parsnip circles. Lay circles flat on a lightly greased baking tray.  While doing this, try to think of other words that rhyme with "snip" and "chip."

Bake for 12-15 minutes, until the parsnips are light golden brown, but not too crunchy. Let cool completely.

Serve your snip chips up with your favorite dip, or pack them in your lunch box!
