Plantain Teepees

  • 2 ripe plantains, peeled and sliced lengthwise
  • 1 teaspoon olive oil
  • 3 tablespoons brown sugar
  • 1/8 teaspoon cinnamon
  • Pinch of salt

Preheat oven to 425 degrees.

Go bananas and dance wildly around the kitchen. Then place the plantain slices into a bowl, and toss gently with olive oil. Add half of the brown sugar and cinnamon and toss so plantains are all coated. Go bananas again!


Lay the slices out on a lightly greased baking tray and bake for 25-35 minutes, until crispy.

While the plantains are in the oven, it’s time for PB & Jammin’! Put on your favorite songs and try to make the others laugh with your silly dance moves.

When the plantains are done, let them cool for 5 minutes. Balance plantains in a teepee formation before serving. Great job, top bananas!
