Pear Pals

•  1 ripe pear •  2 tbsp. marscapone cheese •  3 tbsp. low fat cream cheese •  1 tbsp. brown sugar •  1 tbsp. vanilla extract, divided •  1 tbsp. golden raisins •  1 tbsp. raisins •  ¼ apple, peeled •  1 disposable piping bag or Ziplock bag with bottom tip cut off •  1 cup water
 

Have an adult help you cut the pear in half lengthwise. Cut apple in thin slices. Cut raisins in half. Set aside.

Place pear in sauté pan with water and ½ tbsp. vanilla. Have an adult turn on the heat to low. Bring water to a simmer and cover. Steam pear for 5-8 minutes, until soft. Remove from liquid and cool. Use a spoon to scoop the seeds out of the center of the pear.

In a medium sized bowl, use a spoon to combine brown sugar, cream cheese, marscapone cheese, and the rest of the vanilla. Stir until smooth. Place mixture in bag.

Place pear in center of large plate. Pipe (or squeeze from bag) some of cheese mixture into hole of pear. Pipe the rest of the cheese mixture on top of the pear for a head. Use apple slices to form legs and arms. Use half moon apple pieces to form feet. Place raisins on arms for hands, and on face for eyes and mouth.

Serves 4.

 

Cranberry, Sweet Potato and Chicken Empanada

•  2½ cup flour •  ½ tsp. salt •  ¼ cup butter, softened •  2 tbsp. plain yogurt •  ½ cup water •  1 egg, beaten •  1 chicken breast •  Pinch of thyme •  ½ large sweet potato •  3 tbsp. dried cranberries •  ½ tbsp. brown sugar. •  ¼ tsp. minced garlic •  ½ cup water
 

Preheat oven to 425 degrees.

Have an adult help you brown the chicken breast in a saute pan over medium heat for 3-4 minutes. Add cranberries, thyme, garlic, brown sugar and water. Cook on low until most of the water has been absorbed into the chicken and cranberries, about 8-10 minutes, or until the chicken is cooked all the way through. Let cool for 5 minutes.

Cover sweet potato with a paper towel and microwave 7 minutes, turning potato over halfway through. Let cool for one minute, then peel off skin. Mash sweet potato in bowl.

Using a fork, gently pull chicken apart in the sauté pan. Add mashed sweet potato to the chicken-cranberry mix and set aside.

To make the empanada dough, combine flour and salt in large bowl. Mix in butter and yogurt and stir with spoon. Add water, one tablespoon at a time, until the dough holds together.

On a floured surface, roll dough until it's 1/8 inch thick. Cut in four 8 X 8 inch squares.

Spoonful by spoonful, add chicken mixture to half of each square, leaving a half inch margin on all sides. Fold dough in half to form a triangle. Roll seams up and pinch slightly to seal edges.

Brush top of empanadas with egg wash and bake on greased cookie sheet for 30 minutes or until golden brown.

Serves 4.

Berry Puffs

•  1 sheet pre-made puff pastry •  8 fresh strawberries, washed and stem off •  2 c low fat vanilla yogurt •  4 tbsp. brown sugar •  2 tsp. vanilla extract •  2 circle cookie cutters, one slightly smaller than the other. •  1 egg, beaten
 

Preheat oven to 400 degrees.

Use the larger cookie cutter to cut two circles out of puff pastry dough. Use the smaller cookie cutter to cut the center out of just one of the circles to form a ring. Save the leftover smaller circle. Repeat three more times.

Gently place ring on top of bigger circle and pinch to form a bowl. Place the bowl and the leftover smaller circle onto a sheet and brush with egg. Bake for 15-20 minutes or until golden brown. Let cool.

Have an adult help you cut strawberries into slices. In medium bowl, mix berries with vanilla, brown sugar, and yogurt.

Once puff pastry has cooled, spoon strawberry yogurt mixture into center of pastry bowl. Garnish with berries and top off with smaller circle as a lid.

 

Mama Mato

  • •  1 sandwich tomato •  2 tbsp. parmesan cheese, shredded •  2 leaves of basil •  2 tbsp. diced zucchini •  ¼ lb cooked spaghetti noodles •  2 tbsp olive oil •  Salt and pepper to taste

 

Preheat oven to 375º.

Have an adult help you cut a tomato lengthwise. Use a spoon to core out center of tomato. Place parmesan into center of tomato. Place zucchini for the eyes and nose.

Place tomato onto an oven pan lined with parchment paper. Cut noodles into 4-inch pieces and place on pan. Bake for 5-10 minutes until tomato is golden brown and pasta is crispy.

Once cooled, place tomato onto plate. Slice basil leaves into thin ribbon like strips and use for mouth. Use baked noodles for the hair. You can use these to decorate for eyebrows or hair.

 

Pesto and Parmesan Potato Gnocchi

  • •  2 tbsp. store bought pesto •  2 Yukon gold potatoes, boiled until very soft •  4 tbsp. parmesan cheese, shredded •  1 c Bean Sprouts Marinara (or other store-bought marinara sauce) •  ¼ c low fat milk •  2 tbsp. butter, softened •  1 tsp. salt •  ½ wheat flour, divided •  Water as needed

 

In mixing bowl combine potatoes, parmesan, pesto, butter, and salt. Slowly add ¼ c flour and knead well into dough. Add water as needed to form a solid dough.

Roll dough into 6-inch by 1-inch logs. Use a fork to cut into half-inch pieces. Press down on the top of the gnocchi with the tines of the fork to form indentations.

Place in to a pot of salted water that is at a rolling boil. The pasta will float to the top when done, about 5-7 minutes.

Toss gnocchi with warmed marinara sauce. Serve immediately.

Serves 1-2.

 

Tasty Tiramisu

•  ¼ c low fat vanilla yogurt •  2 tbsp. mascarpone cheese •  1 tbsp. decaf coffee •  2 tbsp. chocolate sauce •  2 tbsp. cream cheese •  1 tbsp. cocoa powder, divided •  1 tbsp. heavy cream •  1 tbsp. vanilla, divided •  6-10 vanilla wafer cookies •  1 tbsp. brown sugar •  1 tbsp. shaved chocolate
 

In a small bowl place 2 wafer cookies and soak with 1 tsp. of vanilla.

In a second bowl blend sugar, heavy cream and vanilla, then add yogurt and coffee.

In a third, medium-sized bowl combine cream cheese, mascarpone cheese, 1/2 tsp. cocoa powder and 1 tbsp. chocolate sauce. Mix until smooth.

Place soaking cookies on bottom of parfait glass. Drizzle rest of chocolate sauce around cup. Carefully spoon in cheese mixture. Layer yogurt mixture on top. Top with remaining cookies. Dust with ½ tsp. cocoa. Sprinkle shaved chocolate on top and place on to plate.

Take a spoon and place on to plate. Dust plate with cocoa powder around spoon, so there is an outline of spoon as decoration on plate.

Serves 1.

 

Y-ogre-t Parfait

A slimy snack Shrek would be proud of!

•  Four small containers of key lime yogurt •  Four kiwi •  One bunch green grapes •  One half honeydew melon •  Green fruit leather •  Drinking straws
 

Have an adult help you cut the kiwi into small pieces, the grapes into halves widthwise, and the honeydew melon into small chunks. Place each in a separate bowl and place in the middle of the table.

Use a parfait glass to layer the ingredients in whatever order you choose. Stick one grape on the end of one straw and place in the glass for ears. Wrap the fruit leather around the stem of the glass. Then eat like ogres!

Serves 4.

 

Easy Cheesy

Tantalize your tummy with this rat-ical treat inspired by Ratatouille!

•  Two slices of bread •  Cheddar cheese •  One strawberry per person •  Carrot matchsticks •  Two mini chocolate chips •  Drinking straws
 

Use the bread and cheese to make a grilled cheese sandwich.

Using the end of a straw, punch out five or six holes in each sandwich, so that the sandwich resembles a slice of Swiss cheese. Feel free to eat the holes.

To create a strawberry “rat,” cut a strawberry in half lengthwise. Affix matchstick carrot (the tail) to the wide end of the berry (the body). Push two mini chocolate chips in the berry for the eyes.

•  2 cup flour •  1 tsp. baking soda •  3 eggs •  ¾ cup brown sugar •  ¼ tsp salt •  ½ oatmeal, ground •  1 tsp. vanilla extract
 

Preheat oven to 350 degrees.

Combine ingredients in mixing bowl. On floured surface, roll dough to 1/8 inch thickness. Carefully move to greased cookie sheet.

In your most Hollywood superstar manner, place both hands in the cookie dough to make your handprint. Use a toothpick to write your name below your handprints.

Cook for 12-15 minutes or until golden brown. Place on cookie rack and let cool. Place cookie on yellow star placemat. Eat and enjoy your moment of fame!
